Start from the number of products you actually have. A catalogue of twelve items needs a different layout from one with twelve hundred: the first looks best as a gallery, the second needs filters, facets and pagination that survive being indexed.
A single-page template works when the product sells itself — one item, one story, one buy button. Once you have categories, you need real navigation and a product page that can carry variants, stock state and shipping copy.
The free templates here are complete, working storefronts, not teasers. They ship compiled CSS, every page listed on the product page, and a licence that allows commercial use as long as the credit link stays in the footer.

The markup is platform-neutral HTML. Porting it into Liquid is straightforward, but the templates are not Shopify themes out of the box.
